PoE 3.22 Ancestor, 3.21 Crucible, 3.20 Sanctum Cast On Critical Strike builds

first time doing COC cant figure out whats wrong with my build when I'm fighting single enemies/bosses feels like im either never hitting or never hitting crits, on pob says my main hand accuracy is 100% and my crit is 100%. any help majorly appreciate.

Tldr: Well as hipster as it can get for a hit based TS Deadeye. Utilizing Voltaxic Rift, Thunderfists, OG Sin for GIGA shocks. For pinnacle bosses utilizing the shrapnel ballista arrow nova tech tho no fully investing into it (I cba calcin dps for ballistas). Running manaforged CoC setup for mark, tornado and the giga shocks, also somewhat aids on clear. Firing 10?! arrows with Voltaxic thanks to proj tattoos quiver, tree and Deadeye ascendency. SO. im a bit stupid, and im sure some of these decisions are stupid, i have a few glaring issues, but to preface, im working on finding a jewel to cap my cold res, and im aware my anoint is for dual wield, the build guide from kobe i was following suggested dual wield would be ideal with this anoint but as soon as i go dual wield i turn into a feather, i have 0 defence and just cant progress when im that weak, as fun as the damage is its not worth dropping this shield which has become crucial for my survivability and a bit of a crut

While having good success with MF, this build dies A LOT. Would like to be able to zoom through and kill most monsters and survive 8 out of 10 maps. Trying to farm a mageblood because I've never had one before... :) Thank you.
